Soup, Salad and Sandwiches

There are those people who call a good meal "soup, salad and sandwiches", but today I did with what I had.

I prepare my roommate and her boyfriend a luncheon every Sunday.

Today, I prepared soup and a sandwich. I wish that I had some produce. I just have not been out shopping for produce. Major grocery stores are astronomical. However, farmers' markets should be selling soon.

As for myself, I had to cut up the sandwich with a fork. No bread. No bun. Just the burger.

Do you like to have soup, salad and sandwiches? Which are your favorites?

In cold weather I really like lentil soup because it's hearty and filling. My other favourites are tomato (I use coconut milk in it to make it creamy), vegetable (just a basic whatever vegetables I need to use up, with herbs, some chilli flakes and garlic) and spicy carrot and ginger.

I don't usually have sandwiches with soup, just toast.

I have yet to consume any lentils. I guess that I can search online.

Today, I had planned on having vegetable soup. I absolutely love homemade Crock-Pot vegetable soup. I usually prepare without meat too. I felt yucky today and went against celebrating Meatless Monday by having Hammy Sammy and chips, then also had 2 smoothies.

Coconut milk here is expensive even at the dollar store.

Coconut milk is generally more expensive than regular milk here too, but I can get it fairly cheaply in tins.

This was the recipe. I don't know if you can get collard greens here and I don't like kale so I used silverbeet. Any greens you could get cheaply would work, or you could skip that part. Lentils are good because they're high protein, low in fat, cheap, and shelf stable (they keep for ages). In some places you can buy them in bulk. You don't need to soak them like you do with beans either. You can, but if you don't they won't be poisonous like beans can be if you don't soak them.

You can absolutely use a crock pot. I've made soup and dahl that way.
