Good to know.

One other bonus with purple cabbage is that if you cook rice or noodles in the water you cooked the cabbage in, then you add lemon juice or vinegar to it, the rice (or noodles) change colour to bright pink (chemistry thing, because of the ph). It's just fun to do, especially if you have children.

Its natural blue food coloring, if you add baking soda on the juice or water its boiled after, You can make natural blue coloring
