I don't make salads very often, although I do eat a lot of fruit and vegetables. I enjoy a simple garden salad. Sometimes I add roast pumpkin or roast beetroot and chickpeas or lentils. Greek salad is also nice, but I haven't found a vegan feta with a texture like Greek feta.
I made this vegan Ceasar salad a while ago and it was nice.

This egg salad recipe is awesome but I would simply use yellow mustard instead of Dijon. Over this past summer, I went to a yard sale and bought an egg cooker. A best investment! You should really buy an egg cooker instead of standing over a pot of boiling water forever piercing with a fork.

Okay, sir, that yellow mustard alternative is really cool. And your egg cooker story reminds me of how tired I am of cooking eggs in a pot every day. It's true that sweltering in hot water for hours is a torturous job.
The proverb says that the one who raises a male does not stop vaccinating. So buy your egg cooker and be saved from the worry of cracking eggs with a fork. It's very easy and it will save you a lot of time in your life.
At the end of the day, when you have your delicious egg salad, you will wonder why you didn't think of it sooner. At the end of the day, you will be encouraged that you bought that good device. Do it, don't be afraid, one beginning brings a good end.
