If you grow them at home, you will be eating them at their freshest state, Alive! You can eat them raw and use them for Chinese Style stir-fries.
Mung Bean Sprouts are rich in nutrition like dietary fiber, Vitamin C, antioxidants, Vitamin K, Manganese, calcium, and many more.
In an old science experiment, my elementary school teacher taught me how to sprout Mung beans.
On a plastic container that you own, place a wet paper towel or regular face towel and put rinsed Mung beans inside. Cover the beans with another layer of a moist towel. After two days, remove the cover and let the sprouts grow. No need for sunlight, As your kitchen light bulb, is enough for them. Harvest them after five days. I usually grow them on the kitchen counter.

All the sprouts I grown on the counter are also covered by a plastic dome food cover, to protect them from insects and contaminants.

All methods for growing Mung bean sprouts also work with Soybeans. Soybean sprouts are rich in Vitamin A, Vitamin C, folate, and antioxidants. This method of growing soybean sprouts works for Mung beans too.

Sunflower Sprouts
Popcorn shoots

The next sprouts I want to introduce are the sunflower sprouts and popcorn shoots. They share the same method of growing. Sunflower sprouts remind me of Shredded lettuce when raw and cabbage when cooked. Popcorn shoots are different from most greens I ate because it has hints of sweetness.
I buy sunflower seeds from Poultry stores, They sell them as bird seeds. I don't buy sunflower seeds from groceries because those seeds are toasted.

There are sprouting-ready sunflower seeds that you can buy but they are expensive so I go for the birdseed because it is the same, sunflower seeds. They are just marketed differently.
I buy raw commercial popcorn from the grocery. Do not buy the microwavable ones because they are covered in oil.

Soaked the seeds in water inside a glass jar or drinking glass.

Cover it with any fabric overnight insects cant enter. Do not worry about the seeds being covered in water because they won't drown. Drain the water on the second-day plant the seeds on a plastic tray or glass baking dish with a thin layer of soil. Place the wet seeds on the top of the soil layer. Put another layer of soil on top of the seeds. Mist your growing tray twice a day.
Both popcorn shoots and Sunflower shoots are ready to harvest after 14 days.
Popcorn shoots go in two colors, green or yellow.

I love bean sprouts and I usually buy them from this posh store. They are pricey here and last week I decided to research into making my own. But first, I'll need to find miming beans, otherwise, I could try the popcorn or sunflower seed ones. Last friday I almost bought lentils because I read somewhere you could use those.
