If potatoes are bad for you, I'd just have to die!

Its bad for you if its peeled. red and blue potatoes are also healthier.

Peeling potatoes does not make them bad for you, just less nutritious than if you left the peel on. They don't suddenly become poisonous or something.

Do you like any topping on your mashed potatoes other than butter?

Sometimes I have jacket potatoes with hummus, tabouli and sausages. They're also nice with baked beans, or with cheese (I can't eat cheese any more myself though), or with seasoning like nooch (nutritional yeast) or garlic salt.

Speaking of potatoes, I'm upset. Egg prices are so high that people are shaping potatoes like eggs and dying them for Easter. This is certainly something I never imagined.

Actually, I stopped dying eggs a long time ago. I've been using the colorful plastic eggs for years.

We just use chocolate ones for egg hunts. I haven't dyed real eggs since I was a child. It wasn't something people did much here back then either, I was just an arty kid.

Not on Easter Sunday. There's dew overnight, but I only hide the eggs in the morning.

I just watched a Korean drama titled “The Potato Lab”. I had no idea that the potato was such an important crop in South Korea. I mean … in the K-dramas, I see them eating sweet potatoes a lot. But it's not just the sweet potato that's a major crop. All potato varieties are critical to the country's economy! Who knew? I didn't!

Today, I prepared a box of dollar store instant mashed potatoes to last a few days.

I ate a bowl served with Country Crock Drizzle & Sizzle (like a butter).

What else can I prepare with mashed potatoes besides butter or gravy?
