I know I had said I would soak my sprouts but I never did. Your photos look so delish, I am making them today. I will not have to go to the Chinese restaurant plus, I have not eaten them in ages.

I am sure I could make the peanut sprouts, I love peanuts and their nutritional value, they also contain healthy fats.

I discovered alfalfa sprouts by accident. I saw my boss out some in his salad. Funny! I never noticed them before. But after that I started seeing them at salad bars. Of course, that was back in the day. Because of COVID-19 we don't have salad bars any more. I found an excellent link.

Growing alfalfa sprouts is not beginner friendly unlike the Mung beans and soy beans variety.

Here is how I rate difficulty of sprouts I grown:

Easy:
Mung beans
Soy beans
peanuts

Medium:
Sunflower
Pea
popcorn

difficult
Chia
Alfalfa
radish
Mustard
broccoli

So you say that Chia is difficult to sprout. Well that explains why that product called "Chia Pet" is so popular. They claim they made growing chia sprouts easy.

"Chia Pets are American icons featuring styled terracotta figurines used to grow chia seeds (Salvia hispanica), where the chia sprouts grow within a couple of weeks to resemble the animal's fur or hair." (Source: https://www.chia.com/pages/about-chia-pets)

Chia pets have the chia seeds in an environment where they can thrive. Its hard to make them thrive in a sprouting tray.

We should be eating more sprouts or making at home. Yet we often neglect doing so.
Perhaps the time to rethink and implement has come now.
