Pop Egg Salad Sandwiches: My Story

I have a friend who is always on a diet. I always ask her where did she gain all of her weight, her big toe? LOL

Personally, I have been attempting to not have as much meat. So far, there is no more tuna in our kitchen. Only one pouch of chicken in the kitchen cupboards. However, we do have a whole chicken and a bag of boneless skinless chicken breasts in our freezer.

I have one exception about meat that I have just to figure out. I love love love pepperoni. How am I supposed to break the pepperoni habit?

When we drive past farms and see cows peacefully grazing in the fields, I think to myself, how could I have eaten that burger?

So, that is where egg salad comes in. We are not killing the chicken!

Egg salad is economical. Friends that I have online complain about the cost of eggs. Would they rather pay between $5.99 to $8.99 for a pound of lunch meat at the deli? I am blessed as a local farmer donates free cartons of eggs every week. However, my roommate buys her’s at the grocery store. My roommate complains that there is a difference in taste.

Egg salad is not hard to prepare! When I first had taught myself how to prepare, all I did was mix the diced eggs with mayonnaise!

Make instant sandwiches! Spread egg salad on bread and place in freezer bags then place in the freezer. When you are going to be busy just take out a freezer sandwich in the morning and have a fresh egg salad sandwich by noon!

Egg salad sandwiches keep my belly full! There are no empty calories! Egg salad sandwiches are a close runner-up to spaghetti!

I highly recommend buying an egg cooker! I bought an egg cooker this past summer at a barn sale (aka: yard sale). The egg cooker was a very good investment!

All you do is place 7 eggs in the egg cooker. The egg cooker cooks the eggs for 10 minutes. Then, the egg cooker cools off for 10 minutes. Take the eggs out and place in a bowl of cool water for 10 minutes. Peel. Dice. Mix with mayonnaise, mustard and melted butter. Keep in fridge for grab and go! Spread on bread with a drizzle of pancake syrup on top!

Yuck, it's not salad without some chopped celery and sweet pickles and pour in a little sweet pickle juice from the jar. Now you got FLAVOR.

One option I like is to first make a bowl of plain oatmeal and then put in a couple of scoops of your egg salad in the bowl. Mix and have a great hot bowl of egg salad/oatmeal instead of a cold sandwich. The oatmeal is a bit healthier than bread.

You can always play with the flavor of your egg salad by adding other ingredients to the mix. I happen to like adding a bit of chopped onion, relish and mustard to the mix. Everyone likes it their own way.

I agree, he was a bit rude, although you have responded the same way to me quite a few times on Forumcoin (calling my drinks 'yucky', saying people are being 'gluttons' if they like to eat more for breakfast than you do etc.) so you might want to bear that in mind.

I do think that to be called 'salad' it should have some form of vegetable in it though.

Eggs are a good, cheap, vegetarian source of protein. If you want some variety, you could also try using more beans, lentils, chickpeas or tofu. If you can find it where you live TVP (textured vegetable protein- dried veggie mince) is great- shelf stable, keeps for a long time and really versatile. They usually have it in health food shops.

Thank you so much for the tip @OldGuy! As a matter of fact. this past week or two, my roommate and I were given a big pouch of oatmeal. I was not sure what to do with the oatmeal and have not had a chance to search online for some recipes.

I have never eaten hot/warm egg salad before. So, this should be interesting!

If I prepare your oatmeal mixture, I think that I would like the mixture chilled. Seems delicious!

I call egg salad sandwiches mini meals. I would rather have egg salad sandwiches instead of a bag of chips. Make sense?

I love eggs. I think your method is delicious, if you find it delicious do you dear?

Freezing the sandwiches for a quick, ready-to-go meal is genius! Having them on hand must make busy days so much easier, and who doesn’t appreciate a homemade lunch that’s already prepped?

Oh yeah! Makes a lot of sense. I know because sometimes - even though I shouldn't - I've been to wolf down bags of chips. Large family size. :lol: But I don't feel full after eating them. Just guilty. :lol:

As my teeth are being pulled slowly but shortly, I keep forgetting that not all of my teeth are there.

Yesterday evening, I was consuming a bagel with pepperoni and cheese and did not chew in small bites. A small piece got stuck.

I coughed the pepperoni up.

I just have to have myself trained on smoothies and there are no if, and or buts about it. I am going to have more than just smoothies. But, at first, smoothies are going to be needed.

About bagels, soft white bread is much easier to consume, especially with egg salad. I have come to rely on egg salad sandwiches. I can even have egg salad on saltines.

At one of my old jobs, there were a lot of Jews and the management gave us free bagels every day. So I could have a toasted bagel with butter for breakfast and I could eat a bagel with cream cheese. It really saved me money by not having to bring lunch from home or eat out for lunch.

There are so many things people have in common and what is amazing is that the person lives in another part of the country or even in another country. Yet we do things that so similar as if we know each other. :lol:

Lately, after 2 to 3 days, my egg salad in the fridge gets dry. I have to mix a few more tbsp of mayonnaise in the egg salad to make moist again. Does this ever happen to you?
