Verity, Fruitlab is available in several countries and they offer different payment options depending on the location. I saw 86 countries under the registration tab (and that includes Philippines, India, Romania, Pakistan, South Africa, Trinidad & Tobago, Portugal, Peru...). PayPal is not an option at this time but they have Amazon, Prepaid Visa and Master Card for some regions. After creating the account, you'll see in your shop what's available for your local area. You can find more information in the thread created by Braids who introduced me to Fruitlab. If you register using his link, you'll earn 100 points. Don't skip the ads when they show up in the videos and you'll be good. Here's the link to the thread:

Yes, you have to use your phone. All the assignments are completed through the App, even the ones that require photos. The photos have to be taken when prompted to do so through the App. You can't just snap from your camera randomly, as you wouldn't be able to proceed with the job. First, you browse the jobs available in your area, choose the ones you are able to complete within the assigned time, then go to the exact locations and follow the instructions in the App. As long as you are in an area where they operate, you can pick up assignments, even if that's not where you live or work. Whatever jobs are available wherever you are at the time will show up when you access the App. The jobs vary, sometimes you're doing audits, other times you're checking out a wine store or taking photos of a demo set up.
When my friend sent me a link to Field Agent, they were available in Canada, Ecuador, Australia, USA, South Africa, Romania, Mexico, and United kingdom. I'm not sure if more locations have been added or if any of these have been removed.
