In South Korea, they turn the leaves of chrysanthemums into vegetables. Chrysanthemum kimchi is one of the most popular pickles in South Korea. Most countries around the world grow chrysanthemums for their beautiful flowers. But in South Korea, chrysanthemum is raised for its leaves, and they eat it.

My garden produces creepers which we are told are a great source of nutrients But not knowing what they are we do not use them

Chrysenthemums leaves are bitter.

That is probably the reason why Koreans pickle them because the pickling process removes the bitterness.In most countries around the world, most of us just, you know, use them for decorative purposes because the flowers are used for decorative purposes, but yeah, Koreans eat them before they flower.
