It depends. They can be, but some do some pretty unhealthy stuff in the pursuit of big muscles like steroids. They also dehydrate themselves for competitions, which is really bad for you.

True. It can mess with their flexibility as well. An archery instructor told me that people who build up their arm muscles too much can't shoot as well because the extra muscle gets in the way (for archery you mainly want a strong back, and to a lesser extent strong shoulders, not so much strong arms). Not that they'd care about that, probably, it's just an example of how optimising your body for one thing only can make it not as good at doing other things.
