Mine is cobbled together from a few different ones. I make a non-alcoholic version, although many of the traditional recipes have a lot of booze.
I scoop the core out of some apples (not the whole way through), stuff them with sugar, put a bunch of cloves in an orange, and then roast all of the fruit for half an hour. Then I put the roasted fruit in a gallon of cider with some cinnamon sticks, allspice, some pieces of crystallized ginger, a few pieces of star anise, and then I grate some nutmeg over it all. If I have some on hand, I throw in some fresh or frozen cranberries too. I let it simmer on low all day long, and we just serve ourselves when we want some. The longer it simmers, the better it gets.
