Delicious bitter gourd

Bitter gourd is no doubt bitter but it can be transformed into something tasty and palatable

There are many ways of doing it and one is to stuff them and fry them. When they are fried the bittrness disappears

And then there is that dish we normally make. Slice the gourd fine and marinate it in salt for half an hour Squeeze out the water and this way the bittierness to some extent disappears

Cook it in masala, add jaggery and temper it with caramelized garlic and mustard - delicious dish is ready.

How do you cook your bitter gourd. Bitter gourd is good for diabetics.

My favorite recipe for bitter melon is called Goya Champoru. It's an Okinawan dish where the bitter melon is sauteed with tofu,egg, shrimp, pork, and mushroom in miso and oyster sauce. I really like it. If you're vegan or vegetarian, you can omit the shrimp and pork and replace it with veggie meat or just stick with tofu. Many Okinawans claim that this dish is the reason why they live up to hundreds of years.

I have sown some bitter gourd seeds and hope that they will grow and yield. That bitterness does add to the taste if other ingredients are added. We take the bitterness away by marinating and squeezing out the juice.

Bitter gourd is good for diabetics.
