I'm guessing this is a translation issue- All meat comes from animals, and poultry are animals (by scientific classification- Kingdom Animalia, Class Aves (birds). Do you mean mammals vs birds? Yep, most red meat is from mammals. White meat can be from birds, fish, rabbits, guinea pigs lambs, calves (veal) or reptiles (eg. crocodile, Iguana).

In Australia, yes they do. You can get it in butchers and supermarkets. It's often sold as meat for pets, but people eat it too. It's quite dry compared with other red meats.

Nope, not wallaby. Some Indigenous people might hunt them, but wallaby meat isn't something you get in supermarkets/at the butcher. Sometimes people eat roadkill wallabies though- just the tail, for stew.
Yes, people eat emu. It's expensive because you can't farm them in large numbers.
