It's nice that they're being inclusive. Good for children with diabetes to feel represented and see a doll that's like them.
The doll could also be someone with Type 2 since they would look the same. Not everybody with type 2 diabetes is fat. Most of them aren't as skinny as a Barbie of course because she's not really the shape of an actual human (those feet for one thing!), but that doesn't matter.
BTW besides diet there are other risk factors for Type 2 diabetes including stress, side effects of medication and child abuse so it's probably best to avoid being judgy about it.
